Last month I received a lovely gift from David and Vanessa with traditional recipes from Jamaica. We already tried one of them and it was incredibly delicious!!! Here are the pictures of the book, the recipe and our version of it. And for the ones who want to try fantastic Jamaican dishes I surely recommend the book.





And here goes the recipe:

Oven-Baked Chicken

1 3-4 lb chicken cut up or chicken parts
2-4 cloves of garlic
2 stalks scallion
1 sprig of fresh thyme
1 tbsp. vinegar
3 tsp. salt
1 tsp. sugar
1/2 tsp. pepper and any herb or poultry seasoning you may like with chicken
1/2 cup white bread crumbs

Sauce

1/2 cup evaporated milk
1/2 cup tomato ketchup
2 tbsp. melted margarine

1. Preheat the oven to 350ºF
2. Mix sauce ingredients and leave to blend.
3. Rinse chicken in lime water and drain.
4. Cut up garlic, escallion and thyme very fine and blend in blender with 1 tbsp. vinegar. Season chicken with these ingredients and leave to soak for 10 minutes.
5. Season chicken with dry ingredients (salt, sugar, pepper, and any other poultry seasoning).
6. Add sauce to chicken and marinate for at least 30 minutes,
7. Put chicken in greased, shallow baking tin, sprinkle on dry, but not brown bread crumbs.
8. Bake for 1 hour exactly, no longer. (In fact, if the oven is hot, look at it in 40-45 minutes)
